What’s Your Biggest Weeknight Dinner Challenge? (Plus $8.00 Coupon Giveaway!)

Happy Friday, everyone! Today I want to ask you all a question: what’s your biggest weeknight dinner challenge? Meal planning? Catering to picky eaters? Repetition of the same recipes? Not knowing how to season foods? I’d love to hear from you so I can incorporate your feedback into my posts.

    My biggest challenge is putting a nutritious, balanced dinner on the table when I am exhausted from another busy day! We love your salads they are the perfect side dish and great for lunches too.

    My biggest challenge is finding something that both my son and husband will eat. They are BOTH picky eaters, which makes each evening a new “project”. I tend to make the same things over and over.

    With 3 children, 2 who are allergic to complete opposite things and a very picky husband it is very hard. So If I cook up pasta, I can serve my daughter the noodles, but with my son, I have to make squash pasta cause he cant have the egg in noodles. Then I have to be careful about peanuts and milk products too. My kids are allergic to so much food so I have to bounce around, make substitutes for everyones needs so they can eat dinner. Then with veggies, my husband wont eat, he swallows them. And he hates a lot of things, so its like Im making 5 dinners for 5 people everynight! Very frustrating!

    My biggest challenge for weeknight dinner’s is finding something quick, easy and healthy. With only two people it’s easy to find something frozen and cook it up so I try to just buy healthy stuff so when I get off work I can only choose healthy foods to cook for dinner.

    My biggest challenge is getting something healthy on the table in a reasonable amount of time- and also having the ability to multi-task while making dinner! So much to do in the evenings, with so little precious time!

    Biggest challenge? Planning the meals and sticking to them…I mean, days you don’t have what you need, or want what you have, or are just too tired to try.

    My wife is doing Weight Watchers and needs low calorie/low fat/high fiber meals. I’ve got high blood pressure and need low sodium/low cholesterol meals. We also have a 3 yr old (not to mention our 3 week old) who usually eats pretty well, but has a small rotation of foods that she really likes. Add to that the fact that we are corn fed, meat and potato midwesterners and its nearly impossible to create a week’s worth of quality menus. Help!
