Easy Dessert Recipe: Pumpkin Mousse Parfaits

If you’re one of those people who are bored of pumpkin pie by the time Thanksgiving rolls around but you still want to celebrate with a seasonal-themed dessert, then this recipe is for you. It’s a bit like pumpkin pie in a glass, but richer, creamier, and spicier. (It’s also prettier if you don’t rush like I did).

These Pumpkin Mousse Parfaits are perfect for entertaining. You can make them ahead of time and then stash them in the fridge, and they’re a nice change from the same-old desserts everybody else serves at parties this time of year.

Here’s how to make them:

Ingredients

  • Reser’s Pumpkin Mousse
  • whipped cream or Cool Whip
  • ginger snap cookies, crushed into crumbles
  • cinnamon for garnish

Preparation Instructions

Step 1: Add a layer of pumpkin mouse to a cup.

Step 2: Sprinkle ginger snap crumbles over the pumpkin mousse.

Step 3: Spoon a layer of whipped cream over the ginger snap crumbles.

Step 4: repeat steps 1-3. Garnish with a dash of cinnamon.

Tips

Start out with less pumpkin mousse and whipped cream than you think you’ll need; otherwise you won’t have room for several different layers.

To make the ginger snap crumbles without a big mess, put them in a ziploc bag and use a rolling pin or a can of vegetables to crush them.
