For a creative way to serve Thanksgiving leftovers, try one of these easy recipes—each calls for one or more Thanksgiving leftovers like turkey, mashed potatoes, or stuffing:
1) Easy Cheddar Mashed Potato Puffs Recipe
Turn your leftover mashed potatoes into Cheddar Mashed Potato Puffs!
This is a great recipe for times when you have leftover mashed potatoes but no leftover entrée-dish to serve alongside them.
Make this quick recipe as explained in the link above, except use leftover turkey in place of beef.
Tip: add the cooked turkey after you’ve mixed together all the other ingredients and then simmer for 10-15 minutes.
3) Turkey Shepherd’s Pie Recipe
Swap out the beef for leftover turkey; otherwise simply follow the original recipe above.
Tip: cook the onions and other veggies over medium heat, and then stir in the gravy and about two cups of cooked diced turkey. Alternately, you can skip the onions and simply microwave some frozen veggies or use leftover ones. Top with leftover homemade mashed potatoes or Reser’s Sensational Sides Creamy Mashed Potatoes.
4) Sausage and Mushroom Stuffed Acorn Squash Recipe
Roast the acorn squash (or other winter squash of your choice) per the recipe directions and then top it with leftover stuffing, like Reser’s Sensational Sides Home-style Stuffing.
Tip: you can even mix in diced leftover turkey in place of the sausage; just add it towards the end of the cooking time and then make sure it’s heated thoroughly.
