How To Scale Up a Recipe for Thanksgiving: 8 Simple Tips

Scaling up a recipe isn’t quite as simple as multiplying the ingredients by 2 or 3 and then following it exactly in every other regard.
Trust me: this is something you’d rather not learn the hard way in front of all of your extended family members.
So to save yourself a load of stress, check out these eight tips before you go doubling (or tripling or quadrupling) recipes for Thanksgiving next week:
1) Seasonings and alcohol: these can overwhelm the other flavors in a dish, so when doubling a recipe start by adding only 1.5 times the amount called for by the original version. You can always add a bit more to taste—but it’s hard to take it out once it’s in.
